    Prepare the salmon:
    Place the salmon fillets on a piece of baking paper, season with salt and pepper and top with lemon slices. Place in the airfryer: 160 °C for approx. 12-14 minutes until the fish is translucent and juicy.

    Roast the Brussels sprouts:
    Clean the Brussels sprouts, cut in half and mix with oil, salt and pepper. Place on a baking tray and bake in the oven at 200 °C top/bottom heat (180 °C fan oven) for approx. 20 minutes until golden brown.

    Potato and carrot pancakes:
    - Coarsely grate the potatoes separately from the carrots.
    - Place the grated potatoes in a clean cloth and squeeze out the juice. Collect the juice in a bowl.
    - Leave the juice to stand briefly until the potato starch settles to the bottom. Carefully pour off the water and return the starch to the bowl.
    - Now add the grated carrot, grated potato, (optionally finely diced onion), salt & pepper and mix everything well.
    - Shape into small pancakes, fry in hot oil over a medium heat for 4-5 minutes on each side until golden brown.

    Stir the dip:
    Mix the sour cream + yogurt + horseradish until creamy. Season to taste with salt & pepper.
